After watermelon salad for lunch and watermelon for breakfast I thought I was done. However 5pm came round and a watermelon vodka cocktail seemed like the best way to end a Monday, on a bright note. A snack of heady coppa, balsamic onion marmalade, and some of the left over water melon salad from lunch – on the upside my antioxidant levels must be sky high.
VODKA & WATERMELON COOLER (from epicurious.com)
(Makes 6 drinks but who is counting?)
– 1,5kg watermelon, rind and seeds discarded and the flesh cut into pieces,
– 1/2 cup vodka
– 1/4 cup Triple Sec
– 3 tablespoons fresh lime juice
In a blender purée the watermelon pieces and strain the purée through a very fine sieve set over a pitcher, discarding the solids. (There should be about 2-1/3 cups juice). Stir in the vodka, the Triple Sec, and the lime juice, pour the cooler into long-stemmed glasses filled with ice cubes.
