Mac ‘n Cheese meets comfort food for a grown up indulgence.
Use a light white sauce as the base of your Mac ‘n Cheese, to it add about 100ml of white wine, 100ml cream, 1tsp of English mustard, and bring to a gentle bubble. After 5 minutes start adding handfuls of cheese and stirring each time to get a silky sauce. I used 200g finely grated extra sharp white cheddar, 100g creamy Gorgonzola and 100g of finely grated Parmesan. This is very rich but that’s why it’s for grown ups. To mine I also added 1/2 a finely shaved black truffle right at the end before adding to the pasta. Once your pasta is nicely coated add to a baking dish. For this amount of sauce we would serve 3 portions but at home you can get away with 4-5. Cover the macaroni with about 50g if grated Parmesan and 50g grated mozzarella for some stringiness. Bake in a hot oven (180) for 20 minutes till golden brown and bubbling. As an accompaniment we serve a small bowl of crisply fried pancetta (Italian Bacon) pieces to scatter on top for a salty porky bite but this is optional.
