Bold Mediterranean flavours!

This is a great dish to prepare when you are pressed for time and are looking for nice bold flavours with very little work, it also makes great use of chicken breasts.  If you like your tomatoes a little more chewy and caramelized stick the tray into the oven as soon as you start preparing everything else so that the tomatoes have a chance to start breaking apart. I love the fact that you can throw everything into a roasting dish and you only need to make 2 checks during cooking, giving you plenty of free time.

Herby Chicken with Cherry Tomatoes and Olives
Serves 4

Ingredients

– 4 large skinless breasts
– 100gms ripe cherry tomatoes, cut in half
– 70gms pitted black olives
– 70mls extra virgin olive oil
– small bunch of thyme
– 3 sprigs rosemary
– 3 tbsp balsamic vinegar
– 12 cloves of garlic
– salt & pepper

Start by preheating your oven to 180°C. In a heavy based oven dish, place the chicken, top with the herbs, tomato, olives, whole garlic cloves. Season well with salt and pepper, before drizzling with olive oil and sprinkling the balsamic over the chicken and tomatoes. Place on the middle shelf of the oven, after about 15 minutes stir the tomatoes and olives around, making sure their delicious juices coat your chicken.

HINT:
If you are always looking for great ways to create lunch box meals this is one of those recipes. When you are preparing supper just add a few extra breasts and use them to make lunch box salads, sandwiches or a delicious chicken and veggie wrap!
