Chewy Breakfast Bars

Breakfast bars are such great ammunition for the day, whilst they do have a little sugar in them you can manage the type you add, and they can be loaded with great fruit, nuts and oats making them a great power house to get you through the morning.  The bars are usually good for at least 5 days when sealed and stored properly so they can be snacked on throughout the week (and don’t let their name fool you they also make a great afternoon snack)

We have used a mixture of goji berries, cranberries, raisins in these ones you could swap it up a bit and add nuts, or seeds to the mixture depending on your taste.

Ingredients

  • 180gms rolled oats

  • 30gms desiccated coconut

  • 100gms light brown sugar / white sugar / I used half demerara and half white sugar

  • 1 ½ teaspoons baking powder

  • ½ teaspoon salt

  • ½ teaspoon cinnamon

  • 2 eggs

  • 125ml milk

  • ¼ cup mashed banana

  • 1 teaspoon vanilla extract

  • ¼ cup dried cranberries

  • ¼ cup goji berries

  • ¼ cup chopped dates

Directions

  • Preheat your oven to 180°C.
  • In a large bowl, combine all the ingredients and stir thoroughly until well combined.
  • Set the mixture aside and then line an 20 x 20 baking tin with baking paper, allow the paper to hang over the edge to make it easier to remove the bars for cutting.
  • Now add the mixture to your lined baking tray and bake in the oven for 30-35 minutes or until golden brown.
