In search of the mythical 6-pack I spend a lot of time looking for meals that load up on nutrients and protein without too many calories.
This is a great power breakfast loaded with flavor and protein.
– 4 egg whites
– 2 whole eggs
– red peppers
– 60g pancetta
– 60g mozzarella cherries
– fresh herbs
In a pan sauté all your veggies together with the pancetta till just done. Whisk your eggs and egg whites together, then in a separate pan start to scramble them, once the eggs are almost done add the cooked veggies and stir lightly to combine.
If you cook the eggs straight in the veggie mixture you will end up with slightly grey eggs because of the mushrooms, which is why I cook them apart.
