Creating the perfect roast potatoes starts with a great roasting potato. I generally try and get hold of organic potatoes they are harvested at the right time and generally have a nice creamy starch.
Preheat your oven to 190°c. Peel the potatoes, depending on the size cut them into large chunks. Place them into your roasting pan. Coat with a generous drizzle of olive oil, salt and pepper as well as any herbs you might like, rosemary or thyme work really well. Dot little knobs of butter around the roasting dish. Now bake until the potatoes are crispy and golden on the outside and the inside are creamy and fluffy, turn the potatoes occasionally.
Try these flavor combinations for a real taste treat:
1. Start by slowly frying a pack of bacon until all the delicious pork fat has run out, then add this to the butter when roasting the potatoes, once the potatoes are finished roasting sprinkle them with the crukbled bacon
2. Use several sprigs of fresh rosemary and coarse salt
