Peanut Butter Banana Power Bars

May 22, 2014 by TSJC Leave a Comment

THURSDAY 22 MAY - 07H00 BREAKFAST

This is a remake of the basic Breakfast bars I have given the recipe for before.  The main difference here is that I went with a higher amount of muesli in this than oats so that it has a nutty crunch, plus I snuck a layer of peanut butter into the bars.

Peanut Butter Banana Power Bars
Ingredients

–  2 cups muesli
–  1/2 cup oats
–  peanut butter
–  3-4 bananas mashed (1,5 cups)
–  1 tsp vanilla essence
–  pinch of salt

Combine the salt, oats and muesli.  Now mix in the banana.  Place half the mixture into a regular loaf tin, before spreading a layer of softenend peanut butter.  Now place the balance of the mixture over the peanut butter and flatten down.

Bake in a 180°C oven for about 15 minutes or until pulling away from the edges.  Turn it out and allow to cool.  Cut into bars.
