Not all chicken mayo sandwiches are created equal. I have a problem with the type that have had the chicken shredded to the point where you aren’t sure a real chicken was involved!
The secret to a great chicken mayo sandwich is great chicken. Start by pan grilling a chicken breast with olive oil, garlic, chili and rosemary. Once the breast is cooked assemble the rest of your sandwich, the chicken should preferably still be warm. I add a tiny bit of mustard to the mayo to give it some kick, avocado to add creaminess and loads of fresh rocket and basil for a peppery finish.
